Healthy Recipes to Help Your New Year Resolution

If you're worried about running out of ideas for keeping to your New Year's resolution to eat healthy, try one of these recipes for a light lunch, dinner, or snack.

Slimmer Sausage and Peppers

With only 292 calories per serving, this tasty entree is filling for lunch or dinner.

  • Preheat oven to 450 degrees
  • Select 10 ounces - approximately 3 links - of your favorite low fat, low sodium sausage such as half chicken and half pork
  • Slice sausage at an angle into individual bites
  • Line a baking dish with tin foil to contain juices
  • Fill the dish with the sausage
  • Add 2 cups sliced bell peppers,1 cup sliced red onion, 5 cloves garlic, 1 sprig of fresh thyme, 16 ounces of redskin potatoes - about 9 potatoes - washed and quartered, 1 tsp. fresh oregano or you can use 1/2 tsp. dried oregano, 1 tbsp. balsamic vinegar and a dash of black pepper
  • Bake for at least 30 minutes. Use a thermometer to check the temperature of the sausage which should reach 165 degrees.
  • Serve with crusty French bread
  • Use leftovers to make sausage and pepper sandwiches

Turkey Tacos

This one is quick and easy.

  • Purchase a pre-packaged taco dinner that includes taco shells and sauce
  • Instead of using hamburger for the filling, use ground turkey
  • Fill each shell and top with lettuce, tomatoes, black olives and low-fat shredded cheese
  • Enjoy the same great taste with less fat and calories.

Yogurt Smoothies

A healthy option that satisfies the sweetest tooth.

  • Blend together 1/2 cup vanilla yogurt, 1/4 cup pineapple juice, 1 tsp. orange juice, 1 tsp. milk,1 1/2 tsp. white sugar, 1 banana and 1 cup strawberries
  • Blend until smooth and serve
  • Substitute blueberries or raspberries for strawberries
