Refreshing Spring Recipes

LEMON & DILL CHICKEN

INGREDIENTS

  • 4 boneless, skinless chicken breasts
  • 3 teaspoons extra-virgin olive oil
  • 3 cloves garlic (minced)
  • 1/4 cup onion (chopped)
  • 1 cup chicken broth
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon lemon juice
  • 2 teaspoons flour
  • Salt and pepper to taste

DIRECTIONS

  1. In a large skillet, heat 1 1/2 teaspoons extra-virgin olive oil on medium-high heat.
  2. Salt and pepper both sides of the chicken and sear them in the skillet until both sides are browned.
  3. Remove the chicken from the heat and wrap it in tin foil.
  4. Lower the heat to medium and add the remaining olive oil to the skillet. Saute the onion and garlic for one minute, then add 1 tablespoon of dill and 1 tablespoon of lemon juice to the pan. Whisk the mixture for about three minutes.
  5. Unwrap the chicken from the foil and saute it in the pan on low heat until it's fully cooked.
  6. Add salt and pepper to the sauce remaining in the skillet and spoon it over the chicken when serving. Garnish each piece of chicken with the remaining fresh dill.

EXOTIC SPRINGTIME SALAD

INGREDIENTS

  • 1 can baby corn, drained (15 ounce)
  • 1 can sliced mushrooms, drained (6 ounce)
  • 1 can black olives, drained (6 ounce)
  • 1 can artichoke hearts, drained (6 ounce)
  • 1 can hearts of palm, drained and sliced (14.25 ounce)
  • 1/2 cup olive oil
  • 1 clove minced garlic
  • 1/4 cup fresh lemon juice
  • 2 fresh parsley sprigs, chopped
  • 4 leaves fresh basil, chopped
  • salt and pepper to taste

DIRECTIONS

  1. Mix the olives, mushrooms, artichoke hearts, baby corn and hearts of palm together in a large bowl.
  2. In a separate bowl, combine the lemon juice, olive oil, garlic, parsley, basil, salt and pepper to create a dressing.
  3. Pour the dressing over the vegetables and serve as an appetizer, side dish or even main course.
